2 tbsp ghee
1/3 c honey
2 medium eggs, room temp
1 tsp vanilla extract
1/3 c blood orange juice
zest of 1 orange
1/3 c coconut flour
1/3 c tapioca flour
1/2 tsp baking soda
1/2 tsp baking powder
2 sliced blood oranges.
Preheat oven to 200°C/ 390°F (180°C fan). Grease an 8” springform tin and arrange the sliced blood oranges on the base and set aside
Beat the ghee, honey and eggs with an electric whisk on high speed for 2 minutes.
Add the vanilla extract, orange juice and zest and whisk for another minute.
Sift in the dry ingredients and whisk on low until combined.
Pour the mix into the tin and spread evenly. Then place in the middle of the oven to bake for 20-25 minutes, or until a toothpick comes out clean.
Take the cake out and allow to cool for 10 minutes in the tin, then carefully turn out onto a cooling rack to cool completely. Slice and enjoy!
