I always find thumbprints fun to make, but also they don't take a ton of time to make! These are filled with a creamy chocolatey filling and they're delicious.

makes 28 cookies

2 c buckwheat flour
1 c coconut sugar
1/2 c coconut oil
1/2 tsp baking soda
pinch of salt
1 tsp vanilla extract
filling
1/4 c soft dates
1/4 c melted coconut butter
1/4 c milk of choice
2 tbsp cacao powder
Preheat oven to 200°C/ 390°F (180°C fan) and line a couple baking trays with parchment paper.
For the filling, place all the ingredients in a blender or high-speed food processor and blend until smooth. Set aside.
Mix the cookie ingredients together in a large bowl until combined. Roll the cookie dough into balls and space them out on a lined baking tray. Use your thumb or a rounded end of a wooden spoon, to press an indent in the centre of the cookie.
Place in the centre of the oven to bake for 15-18 minutes. Allow the cookies to cool before spooning the chocolate filling in the middle of each cookie and enjoy!
