They're creepy and they're coooookie. Double chocolate cookies go down particularly well during spooky szn.


1/2 c ghee or butter, room temp
3/4 c coconut sugar or brown sugar
1 large egg, room temp
1 tsp vanilla extract
1 c oat flour
2/3 c extra dark cocoa powder *
1 tsp baking soda
1/2 tsp salt
1/2 c chopped dark chocolate
edible eyes for decoration
Whisk the ghee, coconut sugar, egg and vanilla extract with an electric whisk on high speed for 3 minutes. Sift in the flour, cocoa powder, baking powder and salt and fold until a cookie dough is formed. Add the dark chocolate and fold again until just combined.
Scoop about 2 tablespoons of dough and roll into balls. Place on a baking sheet and top with edible eyes.
Chill in the fridge for an hour, or freeze for 15 minutes in the freezer.
Preheat the oven to 200°C/400°F/Gas 6 (180°C fan) and line two baking trays with parchment paper.
Bake for 10-12 minutes and let the cookies cool on the tray for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
