
I wasn’t going to post these because they didn’t quite turn out how I wanted - supposed to be blondies but instead I got these moist n crumbly n delish cake bars, so I AIN’T COMPLAININ’ 🤷🏻♀️ they’re gone now but just thinking about them has my mouth watering 🤤 ⠀⠀⠀ Ingredients 1 c quinoa flour 1/2 c almond flour 1/2 c coconut flour 1/2 c coconut sugar 1 tsp baking powder 1 tbsp cinnamon pinch of nutmeg 1/2 tsp salt 1/4 c maple syrup 6 tbsp melted and cooled butter 2 tsp vanilla 2 eggs
1/2 c toasted pecans 1 c fresh roughly chopped cranberries ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat the oven to 180c and prepare a 9x9 tin. Place the chopped cranberries on a baking tray and let them dry out in the oven for about 20 mins (mixing halfway through) Mix the wet ingredients in a larger bowl, the dry in another and slowly mix in the dry to the wet. Finally mix in the cranberries and pecans and let it bake for about 35-40 mins or until the toothpick comes out clean. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
