Firecracker Chicken Lettuce Wraps

Sweet, spicy, sticky, and crisp. These lettuce wraps are everything you crave - golden glazed chicken wrapped in cool lettuce with crunchy veg on top. It’s light but satisfying, easy to throw together, and loaded with flavor that just works. Perfect for a weeknight dinner that feels a little fancy without trying tooo hard.

Ingredients

For the chicken

  • 1 lb boneless chicken breast or thighs, thinly sliced

  • 4 tbsp tapioca flour (or cornstarch)

  • 2 tbsp olive oil, divided

  • 1/2 cup soy sauce or tamari

  • 3 tbsp tomato paste

  • 1 tbsp rice vinegar

  • 1 tsp paprika

  • 1 tsp chili flakes (adjust to taste)

  • 4 tbsp honey

  • 1 tbsp fresh ginger, grated

  • 2 cloves garlic, minced

  • 1/4 cup water

  • 2 spring onions, finely chopped

For the wraps & toppings

  • Baby romaine

  • Red cabbage, thinly sliced

  • Optional: sesame seeds, chili flakes, cooked rice or noodles

Method

1. Prep the chicken
In a bowl, toss the sliced chicken with tapioca flour and 1 tbsp olive oil.

2. Make the sauce
Whisk together the soy sauce, tomato paste, vinegar, paprika, chili flakes, honey, ginger, garlic, and water.

3. Cook the chicken
Heat the remaining tablespoon of oil in a skillet over medium heat. Add the chicken and cook for 5–6 minutes until golden and crispy on the edges.

4. Glaze
Pour in the sauce and let it simmer for 4–5 minutes, until thick and glossy. Stir in the spring onions and turn off the heat.

5. Assemble
Layer lettuce cups with chicken, cabbage, cucumber, carrots, and any toppings you like. Rice or noodles if you're into it. Finish with sesame seeds or chili flakes.

6. Serve
Fresh, fiery, and full of flavor. Add it to your dinner rotation, you won’t regret it.
