Pistachio-Lime Crème Pot [High Fiber High Protein]
This lil pot tastes like dessert and happens to be gut-friendly too!
Silky, crunchy, high-protein and high-fiber - the kind of recipe that makes your gut and your taste buds equally happy.
Ingredients
Base
- ¾ cup full-fat cottage cheese 
- 5–6 tbsp water 
- Juice of ½ lime 
- Zest of ½ lime 
- ½ tsp vanilla extract 
- ¼ cup pistachios 
- 1-2 tbsp honey (adjust to taste) 
- 1 tbsp chia seeds 
- 2–3 tbsp full-fat Greek yogurt 
Magic Shell
- 1 tbsp white chocolate, melted 
- 1 tsp coconut oil 
Instructions
- In a small bowl, stir together chia seeds and water. Let sit for 10 minutes to gel. 
- Once gelled, add to a high-speed blender along with the cottage cheese, lime juice, zest, honey, pistachios, and Bio.me fiber. Blend until silky smooth. 
- Spoon the mixture into your serving glass or jar and chill for 30–40 minutes. 
- Once chilled, top with a layer of Greek yogurt. 
- Melt white chocolate with coconut oil and pour gently over the yogurt layer to create your magic shell. 
- Optional: finish with chopped pistachios, flaky salt, or a rose petal. 
- Chill in the fridge for at least 30 minutes to set the shell, then crack and enjoy.
