Pistachio-Lime Crème Pot [High Fiber High Protein]
This lil pot tastes like dessert and happens to be gut-friendly too!
Silky, crunchy, high-protein and high-fiber - the kind of recipe that makes your gut and your taste buds equally happy.
Ingredients
Base
¾ cup full-fat cottage cheese
5–6 tbsp water
Juice of ½ lime
Zest of ½ lime
½ tsp vanilla extract
¼ cup pistachios
1-2 tbsp honey (adjust to taste)
1 tbsp chia seeds
2–3 tbsp full-fat Greek yogurt
Magic Shell
1 tbsp white chocolate, melted
1 tsp coconut oil
Instructions
In a small bowl, stir together chia seeds and water. Let sit for 10 minutes to gel.
Once gelled, add to a high-speed blender along with the cottage cheese, lime juice, zest, honey, pistachios, and Bio.me fiber. Blend until silky smooth.
Spoon the mixture into your serving glass or jar and chill for 30–40 minutes.
Once chilled, top with a layer of Greek yogurt.
Melt white chocolate with coconut oil and pour gently over the yogurt layer to create your magic shell.
Optional: finish with chopped pistachios, flaky salt, or a rose petal.
Chill in the fridge for at least 30 minutes to set the shell, then crack and enjoy.
