Pistachio Protein Chocolate bars
Creamy, sweet, and decadent, these pistachio protein chocolate bars give us ice cream energy straight from the freezer. Nutty, protein-packed, and coated in rich dark chocolate, they make the perfect nourishing snack or post-workout treat.
Ingredients:
- 1 C pistachio slivers or shelled pistachios 
- 1/2 C pea protein powder or protein of choice 
- 1/2 C bovine collagen 
- 1/4 - 1/3 C honey (adjust to taste) 
- 2 TSP vanilla extract 
- 1/4 TSP flaky salt 
- 1/4 (or 1/8*) C Greek yogurt 
- 1/2 c chopped pistachios 
- 270 g/ 9.5 OZ 70% dark chocolate 
Method:
- Grease and line a small loaf tin. 
- In a blender or food processor, combine pistachios, protein powder, collagen (if using), honey, vanilla, and salt. Blend until smooth, scraping down the sides as needed. 
- Add Greek yogurt and blend again until smooth. 
- Pour the mixture into the prepared tin, spreading evenly. Sprinkle the chopped pistachios on top, pressing them down lightly. 
- Freeze for at least 8 hours or overnight. 
- Once set, melt the dark chocolate. Slice the pistachio filling into bars, then dip each bar into the melted chocolate, coating fully. 
- Place the chocolate-covered bars on a drying rack or parchment paper, then transfer them back to the freezer to set. 
- Sprinkle with flaky salt, and enjoy! 
Notes:
- Pistachio slivers result in a smoother texture and a more vibrant green filling. They can be found in Persian or Middle Eastern stores or online. If unavailable, regular shelled pistachios work just fine. If not using collagen. 
- If you’re not adding collagen, start with 1/8 C greek yogurt and increase up to one-quarter cup as needed.
