PB Cookie Dough Protein Bars [No Bake]

Ingredients
- 1/2 cup peanut butter 
- 1/2 cup light raw honey 
- 1 tbsp coconut oil 
- 1 tsp vanilla extract 
- 2 TBSP filtered water (more may be needed) 
- 1 cup unflavoured protein powder* 
- 2/3 cup oat flour 
- 1/4 tsp flaky salt 
- 1/2 cup chocolate chunks or chips 
- 100g/ 3.5oz 70%+ dark chocolate, melted (for topping) 
Optional for finishing:
- Flaky salt 
- Rose petals 
Method
- Mix the wet ingredients: In a medium bowl, combine the peanut butter, honey, coconut oil, vanilla extract until smooth and water. 
- Add the dry ingredients: Stir in the protein powder, oat flour, and flaky salt until a dough forms (add more water if needed) 
- Fold in the chocolate: Gently mix in the chocolate chunks or chips. 
- Shape the bars: Press the dough into a lined 8x8-inch pan, spreading it evenly. 
- Melt the chocolate: In a microwave-safe bowl or over a double boiler, melt the dark chocolate until smooth. Spread it evenly over the cookie dough layer. 
- Chill: Place the pan in the refrigerator for at least 1 hour or until the mixture is firm. 
- Cut and finish: Slice into bars. If desired, sprinkle with flaky salt and rose petals for an extra touch. 
- Store: Keep in an airtight container in the refrigerator for up to a week.

- Feel free to swap honey for maple syrup to make this recipe vegan. 
- Peanut butter can be substituted with any nut or seed butter, like almond or sunflower butter, to suit your preference.
