Ingredients 4 eggs (separated) 1/2 c maple sugar 3 tbsp lemon juice 3 tbsp melted @carringtonfarms ghee + coconut oil 3 tbsp water 1/4c maple sugar 1/3 coconut flour 3/4 almond flour 2 tbsp tapioca flour 1 lemon zest 1/2 tsp salt 1 tbsp ashwagandha (optional) handful of blackberries/bluebs
Method preheat oven to 180c then grease and line a 9 x 9 tin in a medium bowl whisk up the egg whites on high speed until stiff, then slowly incorporate 1/2 c maple sugar while whisking then carry on whisking for a couple of minutes (until you have glossy peaks) in a large bowl whisk up the yolks and add the lemon juice, oil and water, mix, then add the rest of the dry ingredients and give it another mix. take about a third of the egg white mix and gently fold into the flour mix until incorporated, then fold in the rest of the whites pour into the prepared tin, sprinkle the berries on top then put in the oven to bake for 20-25 minutes or until the toothpick comes out clean let cool in the tin for about 10 minutes then carefully take out to cool on a drying rack. once cooled, sprinkle some coconut flour and almond flakes on top to be fancy. slice n serve! 💖
