
Carrot cake cookie balls. They’re crumbly, they’re sweet. they GOOD. 🙌🏻 These were inspired by a persian sweet (ghotab) which are basically deep fried pastry balls stuffed w almonds/walnuts. - cept these are baked and filled w a sweet sweet mixture of spiced carrot and walnuts. So I’m not going to be like ‘yay they’re so easy n fun to make’ because they do require a lil bit o’ patience but what I WILL SAY is that they are worth it af - like I said, they good. 🤤

If you do want to give them a go, here’s the recipe: - Cookie dough 1/4 c ghee/butter/coconut oil (melted and cooled) - I used @carringtonfarms coconut oil + ghee 1 egg 1/4 c maple sugar 1/3 c yogurt 1/4 c milk of choice 3/4 c @teffco ivory flour 1 tsp baking powder 1/2 tsp salt - Filling 3/4 c grated carrot 1/3 c honey 1/4 c chopped walnuts 1 tbsp coconut flour pinch of nutmeg 1/2 tbsp cinnamon - Line a large tray with parchment paper and set aside. for the cookie dough, combine the wet ingredients in one bowl, the dry in another and mix the dry into the wet then leave to harden up in the fridge (about an hour) - In a small saucepan add the grated carrot and honey and let simmer for about 10-15 minutes until the carrots are soft. add the rest of the ingredients and let cook until its a jam-like consistency. let it cool a little. - Take the cookie dough out the fridge and knead it a lil to make it pliable. Use a tablespoon to scoop out a section, roll into a ball and flatten, use a teaspoon to scoop some filling in the middle and carefully wrap the dough around it and roll into a bowl then place on the cookie tray. repeat. Chill for another hour in the fridge (you can skip this step but this helps hold its shape) - Preheat oven to 180c then put the cookies in to bake for about 10-15 mins. Let cool then roll in coconut flour AND ENJOY!! ♥️
