You heard that right, (or read even). These are like hot fudge brownies in cookie form and they melt into your mouth. SO good and they’re made with only six ingredients.
make 24 cookies
2/3 c date syrup
2/3 c softened ghee
1 medium egg
2/3 c cocoa powder
2 1/2 c tapioca flour
1/2 c dark chocolate chunks
Preheat oven to 200°C/ 390°F (180°C fan) and line a couple baking trays with parchment paper.
Whisk all the wet ingredients in a large bowl, sift in the dry, add the chocolate chunks and mix with a rubber spatula until combined.
Divide the dough into roughly 24 balls. Place them on the trays and press down with the bottom of a glass cup or something flat.
Bake for 10-12 minutes or until the edges crisp up. Allow to cool for 15 minutes before serving. I highly recommend eating these while they're warm, enjoy!
