Sweet Potato Fries


Ingredients: 3 chopped med sweet potatoes 2 tbsp melted ghee 1 tbsp tapioca flour Avo Dressing: 1 large avocado 1 garlic clove 1 tbsp tahini 1/4 c nutritional yeast 1/2 c cashew milk about 1/2 c water salt to taste Soak the potatoes in cold water for an hour. (Optional but makes them more crisp) Preheat oven to 200c pat dry the potatoes then throw in a large baking tray and drizzle oil and toss in the flour, coating them with your hands. Arrange potatoes in a single layer being sure not to overcrowd. bake for about 20 mins/ until golden, flipping halfway through. Let rest in the pan for 5 mins before serving. To make the dressing blend all ingredients except water until smooth and creamy then gradually add the water until it reaches desired consistency. serve and ENJOYYY
